It is the season for all things pumpkin and I can’t think of a better way to celebrate Thanksgiving then with turkey, dressing and some pumpkin pie pudding.  Of course you don’t have to limit yourself to just thanksgiving for this scrumptious dessert, have it all year round, I do!

Here at Bumblebee Chocolates we love pumpkin pie so much we made a pumpkin pie flavored fudge which is also super yummy!

Pumpkin Pie Pudding Ingredients:

½ C sugar, divided
2 Tble Cornstarch
1 ¾ C milk
1 Large Egg
½ C unsweetened pumpkin
1 tsp. Vanilla Extract
½ tsp. ground cinnamon
1/8 tsp. ground nutmeg
½ tsp. Pumpkin Pie Spice
1/8 tsp. salt
¼ C Heavy Whipping Cream

Combine 6 Tble sugar and 2 Tble cornstarch in a medium saucepan over medium heat. In a separate bowl combine milk and egg, stirring well with a whisk. Gradually add milk mixture to sugar mixture, stirring constantly, and bring to a boil. Cook for 1 minute, stirring constantly. Remove from heat.

Combine pumpkin and the next 5 ingredients (through salt) in a bowl, stirring well. Slowly add pumpkin mixture to milk mixture, whisking constantly. Place pan over low heat, and cook for 3 minutes or until thoroughly heated, stirring constantly (do not boil). Divide pudding evenly among 4 desert bowls or glasses. Cover surface of pudding with plastic wrap and chill.

Right before serving beat heavy whipping cream and sugar together in mixer until stiff peaks form.  Top the pudding with whipped cream and serve.

Tip: Whisk well when combining ingredients to avoid lumping.

Sweet and Sassy cooks up some gluten free chocolate cake.

It’s been a year since Timber and I last did a cooking show episode, wow did it go by fast!  We did not plan on taking a hiatus but we’re back and really happy about it.

AND!  Guess what?  We renamed our Show to “Sweet and Sassy”.  I’m sweet and she’s sassy   We are starting anew, kinda like riding a bike; you’re a little wobbly until you really get going.  It is humble beginnings, I’m sure you can tell but we really hope you enjoy our show, Timber and I have fun and look forward to filming many more.

On a funny note, if you find anything looking sort of out of place on my arm during the show that would be my slow recovery from a disagreement I had with some Oak I came into contact with.  Don’t you worry though, I am healing up real fine.

This chocolate cake lives up to the BBC sweet treat standards and surprisingly; is made without flour.  When you take it out of the oven there is a nice crunchy crust on top with a soft and silky inside.  There is no way I can wait for this chocolate cake to cool before cutting, the warm rich dark chocolate is way to tantalizing on the tongue.  This chocolate cake is delicious whether you live a gluten free life style or not.  Enjoy!

Ingredients

12 oz dark chocolate (58-62 percent cacao)
8 oz (16 tbsp) unsalted butter
6 large eggs
1 cup sugar  (I like to use Sucanat Organic Sugar)
1/4 tsp kosher salt

Spray a nine-inch springform pan with nonstick spray. If using a nonstick pan, do not spray. Cut a 9 inch circle of parchment paper and line the bottom of the pan.

• Over a double boiler, melt the chocolate and butter, being careful not to overheat. Stir until smooth. Whisk in the sugar and salt, and stir until combined.
• NOTE: You can also melt them together in the microwave being sure to stir every 30 seconds so as not to scorch the chocolate.
• In another bowl whisk eggs just until combined. Add chocolate mixture to eggs and whisk until combined.
• Spread batter in the pan. Bake for about 30-35 minutes on 350 degrees until a toothpick inserted in the middle comes out fudgey. It should neither be shiny and wet nor completely dry.
• Let cool until room temperature. Remove the ring and invert onto a flat plate. Remove the bottom of the pan and the parchment paper.
• Cut with a hot, dry knife into 12 pieces.

There is something fun about turning natural foods into great decorations. You don’t have
to be an expert to make these easy craft ideas to spice up a party or a dinner with family and friends. Use easy to find fruits and vegetables at your local grocery store to make floral arrangements and serving dishes.

Table Center Piece

Hollow out a fresh pumpkin or squash and add your favorite flower with a little bit of water.

Dessert

Don’t save the best for last, start with dessert! Cut up chunks of apple then fully dip them into the caramel. For a fun touch cover the bottom with nuts or some melted fudge.

Appetizer

Slice some peppers in quarters with cream cheese dip or hollow out a bell pepper and fill with ranch dressing.

Dinner
Pumpkins and squashes make a perfect bowl serving bowl. Make a chunky stew with pumpkin or a warm squash soup stopped with bacon and sour cream.

By doing this yourself or together with your kids your table now looks amazing and it’s a party hit.
